Contrasting sweetness of the chicken thigh and tenderness of the sweetbread, finished with a satay sauce delivering a delight kick of heat.
Crispy marinated pork belly, complimented by flavoursome Thai basil and chilli.
An absolutely amazing zero waste dessert, technically brilliant, a banana parfait, filled with banana jam and caramel in the form of a banana, roasted peanuts, peanut ice cream and what appears to look like a crisp twig from banana skin. Served with a banana skin caramel and crisp sable crumb.
