The Mess room prior to transformation

 

Working with the owner Johnny Messum, of Messums Art gallery in Wiltshire, Insight Hospitality was challenged with transforming the former staff mess of the art centre, into a modern restaurant, focused on the best seasonal products.

The brief was to create a destination venue, which will attract high net worth individuals into the art gallery by adding the art of cooking to the offer. The evening offer will be supported by a lighter menu at lunch time, allowing clients to stop for a simple coffee of a light meal.

Insight Hospitality appointed Chris Warwick as head chef (ex Marco Pierre White, Gordon Ramsay, Galvin) and assisted the delivery of Chris’s refined seasonal British offer.

 

 

 

The wine list was curated with the inclusion of the owner private cellar, offering a large selection of fine wines.

The recruitment of local staff was followed by intensive training in fine dining service under our guidance.

 

 

All operation systems were introduced by our team to allow bookings, feedback and cost controls.

The project is an ongoing development and will see in the near future the transformation of a second building into a all day café and also potential addition of rooms.

 

The vision is to position the venue as a food heaven for Wiltshire, by offering an artisan produce market, café, restaurant and adding special events during the year. Messums aims to create a great mix between art and gastronomy.
